My Answer To Ordering Pizza, A Gluten Free Quickie (RECIPE)


It’s Friday night. TGIF!  And seriously. Really.  I’m genuinely thanking God that I survived the week until Friday!  It’s been one of those weeks that make you feel like you were stuck in a blender and came out as some kinda mush.  I have no capacity to make dinner. None.
One of the most frustrating sacrifices of food allergies is the All American Dinner Cop-Out.  Ordering pizza, or any take out for that matter. But, mainly pizza.  I miss pizza. On those days when I just can’t even begin to muster up the energy to feed this crew, I gaze off into space and daydream about ordering a nice hot pizza, delivered to my door.  The most work for me is finding cash for a tip. Then POOF!  Reality strikes, and if I’m being honest I find myself channeling my inner foot-stomping, lip-out-pouting my four-year-old in the end.  I don’t have time for daydreams of being delivered by a delivery. I have to pull together dinner. And I won’t be ordering pizza.
In a pinch, I’ve found a simple way to make a pizza-like meal that is quick, easy and the kids LOVE it.  Better yet, I can keep all the ingredients on hand for emergencies like today. Because, I’ll say it again, I just can’t order pizza.  But I can make these in under 20 minutes.  Who was it that used to give you your pizza free if it took longer than 20 minutes?  Those were the good old days. Free pizza.  Mmmmm.
20 Minute Gluten Free Mini-Pizzas
1 package corn tortillas
1 jar spaghetti  sauce
1 bag (2 cups) of grated mozzarella or pizza cheese mix
toppings of choice sausage, veggies, chicken… (we had turkey pepperoni tonight)
Turn your broiler on low.  heat up a skillet on high on the stove top. Once it is hot, throw on a tortilla. It will bubble up in 5-10 seconds. Flip it over for another 5-10 seconds. Lay it on a cookie sheet. Repeat with as many tortillas as you intend to make pizzas. I can fit 6 on one cookie sheet and my kids eat 2 each.  Now, in a real-time crunch you can skip the skillet and just lay the tortillas on the cookie sheet to build your pizzas, but they get a bit soggier that way.
Spread 1 1/2 T of sauce on each tortilla. Add toppings. Sprinkle cheese.  I get 12 pizzas out of one 2 cup (80z.) bag. It’s just enough for each of us to have 2.
My ten and eight year old can make these for dinner. So, technically I can order pizza, if I’m ordering them to make it. It kinda works. Right?
